Mushroom chicken bake

So easy and it's only 3 ingredients. And I bet you have them in your house right now! I served it will mash potatoes and used the extra sauce as gravy. If someone in your family has an aversion to mushrooms you can use cream of chicken soup instead. Still so good! Plus my almost one year old even loved it! He was making yum noises while he ate it! Can't beat it when a almost one year old love it! And no pictures because it is so simple you would laugh looking at the pictures!!

8 chicken legs or 6 chicken breasts
1 large can of cream of mushroom soup. Or 2 regular cans.
All purpose Seasoning salt to taste.

Preheat oven to 400. Evenly space chicken in 9x13 pan. Pour soup over. And then sprinkle seasoning salt on top. Cook for 1 hour. Stir half way through.

That's it!! So easy!!! Enjoy!

Buffalo Chicken Casserole

Want some loaded potato skins? But want to make a meal out of it? This recipe is so good. My husband was in love with this. We very rarely finish our left overs before they go bad. But this dish was half eaten for dinner and then we finished off the rest for lunch. It's one of those meals that gets better the next day! I promise. I did not use every specific ingredient I just uses he closest thing I had to them. I used chili powder instead of paprika. And garlic salt instead of garlic powder. And then for hot sauce I used tobasco. I am not a fan of tobasco but this kind of made me a fan. Thank you pinterest! Oh and I promise my pictures will actually be in order now that I have a app to make them into one picture!! Enjoy!!!

2 lbs boneless skinless chicken breasts cut into 1/2 inch cubes
8-10 medium potatoes cut into 1/2 inch cubes,skin on
1/3 c olive oil
1 1/2 tsp salt
1 TBS freshly ground pepper
2 TBS paprika
2 TBS garlic powder
6 TBS hot sauce

Topping:
2 c Fiesta blend cheese or a cheddar jack cheese mix
1 c crumbled bacon
1 c diced green onion

Preheat oven to 500. Mix olive oil, salt, pepper, paprika, garlic powder, and hot sauce. Add potatoes to the mix and coat. Spray a 9x13 pan. Carefully scoop into dish, leaving behind as much sauce as possible. Set aside you will need that in a little bit. Bake for 45-50 mins until potatoes are brown and crispy. While potatoes are cooking place cut up chicken breasts into the remainder of the sauce. Once potatoes are fully cooked remove from oven and lower temperature to 400. Top with chicken. Mix together cheese, bacon and green onion. Top the raw chicken with the mixture. Return to the oven. Bake for 15 mins. Or until chicken is cooked through. Serve with hot sauce, ranch or sour cream.

Texas trash dip

Sounds funny but so good. And so easy! The original recipe doesn't call for salsa but I love salsa! Especially homemade! I'll have to give you that recipe soon! Because my father in law is Mexican so he taught me how to make the good stuff!!

2 cans refried beans (16oz each)
1 c sour cream
1 8oz block cream Cheese, softened
1 packet taco seasoning
2 cups Monterey jack cheese,shredded
2 cups cheddar cheese,shredded
1 c salsa of choice(optional)

First you mix together the cream cheese and sour cream. Then add in beans. Then add in the taco seasoning. Place that mix into a 9x13 pan. Then top with salsa if desired. Then top with cheese. Bake at 350 for 25-30 mins. You want the cheese melted and a little brown. Serve with chips.

We ate it as a meal and it was filling and delicious!

Zesty Italian chicken

Now that we have moved and are settled in its time for another recipe. Zesty Italian chicken. So good. Serve over bow tie pasta. Or rice. And super easy. And I tried some crockpot liners and they are awesome! No clean up!

3-4 chicken breast cut into bite size pieces
2 cans cream of chicken soup
1 block cream cheese
2 packets zesty Italian seasoning
Place all in the crockpot and cook for 3-4 hours. Serve over bowtie pasta or rice.

Mexican Chicken

So yummy! And very easy! So delicious! And made in the crockpot!! Serve like a taco. Or like a sandwich. Or nachos or tostadas!! So many choices!!! And so easy and juicy and tasty! And guess what 4 ingredients!!

3-4 chicken breasts
1 1oz packet ranch dressing mix
1 1 oz(or 1.25) taco seasoning packet
1 14oz can chicken broth

Place chicken in crockpot. Then pour in ranch seasoning then taco seasoning then chicken broth. Cook for 3-4 hours on low. Shred chicken and serve.

Mississippi Roas t(Crockpot)

I have never had a roast that has been so delicious and extremely easy to make! I paired it with gravy made from the juice that was made from the butter and mixes. And roasted broccoli with blood orange soda! It was so good I cant even tell you how good! I seriously had to stop myself it was so good I didnt want to stop eating! By far my favorite thing I have tried from Pinterest! Enjoy!

Mississippi Roast
1 Roast (mine was 2lbs because there is only 2 of us)
1 packet ranch dressing mix
1 packet AuJu gravy mix
1 stick butter
5 pepperoncini's  ( you buy an entire jar)

1 place roast in crockpot
2 Pour ranch mix on top

3 Pour AuJu mix on top

4 Place butter on top

 5 Add Pepperoncinis 
 6 Cook on Low for 8 hours

7 Cut and enjoy!
 To make the juice into gravy I used a strainer to remove the fact and the peppers. Then added about 1/4 cup of flour. I just kept mixing it in little by little until I was happy with the thickness.
 For the broccoli I rinsed it cut it into bite size pieces. Place in bag drizzle in olive oil and pappas seasoning until coated to your desire. Cook at 375 for 20 mins. Until brown and tender.
It was an amazingly easy dinner. So delicious and minimal clean up! Which makes everything better!

Crockpot banana bread

What? So good! Amazing! And so moist. I added walnuts which was delicious and light corn syrup instead of dark. So good. This will a staple in our house. I cooked mine for 2 hours. And sorry I didn't get pictures of the finished till we had already ate most of it! Pictures at the end.

1 3/4 c all purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/3 c butter or margarine
2/3 c sugar
2 eggs well beaten
2 tbsp dark corn syrup
3 ripe bananas well mashed
1/2 c walnuts (optional)

Grease and flour a 4 1/2 quart crockpot. Mix flour, baking powder, salt and baking soda. Set aside. Cream butter with mixer until fluffy. Slowly add sugar, eggs, corn syrup, and mashed bananas. Beat until smooth. Gradually add flour mix to creamed mix. Add nuts now if desired. Pour into crockpot and cook on high covered for 1 1/4 to 1 1/2 hours. Or until toothpick comes out clean. Let cool, then invert on serving dish!

Monterey Chicken

So this recipe has been going around pinterest! And it is so good! All the ingredients together is so simple but so delicious! Pictures of each step at the end of the post!! Enjoy!

4 Chicken breasts
1/4 c bar-b-que sauce
1/4 c real bacon bits
1 c Colby jack cheese,shredded
1 14oz can Rotel Tomatoes, drained and get the ones with the green chilles added
Sliced green onions
Pepper

Pound out the chicken to flatten. Season with pepper. Grill chicken until no longer pink. (george Forman grill. Yay!) place on baking sheet covered with foil. Top each with sauce, cheese, tomatoes, green onions, and bacon bits. (In that order) Place in oven at 400 degrees until cheese is melted about 5 mins.

So good!!! And worth it!

Cheesy Green beans

So I love a good green bean side dish so tonight I made up a mash up of green bean casserole and this yummy broccoli and cheese side. Enjoy! Sorry I have been MIA being sick is kicking my behind!

2 cans green beans
1 can cream of mushroom soup
1/2 c milk
1 c grated cheese
1/8 teas pepper

Mix soup, milk, cheese and pepper. Mix in green beans pour into container back at 350 for 20 mins. Until bubbling.

Chicken cordon blue casserole

So yummy! Makes me want to sing the yo gabba gabba song! Again very easy meal and you will have to stop yourself for eating the entire pan in one sitting! Instead of paprika I use chili powder. And use dried parsley.

2 c cooked rice
2 c cooked chicken cut into pieces
6 slices Swiss cheese
10 slices of cut up ham
2 cans of cream of chicken soup
1/2 c milk
1/2 c sour cream
10 saltine crackers
1/2 teas paprika
1/4 teas garlic salt
1/2 teas parsley

Coat 9x13 pan with cooking spray. Spread rice on bottom. Arrange chicken on top. Then the cheese. Then the ham. Mix the soup,milk, and sour cream. Spread gently on top. Crush the crackers then add the paprika, garlic salt, and parsley. Sprinkle on top. Cook at 350 for 30 mins.

Frosting!!

In need of a yummy and easy frosting recipe? Well look no further! With 5 ingredients it doesn't get much easier then this! The hardest part is probably sifting the powdered sugar! And y'all that is pretty darn easy to do! Also ley the butter sit out and get to room temperature. Do NOT I repeat do NOT melt the butter in the microwave. You will end up with a super thin frosting that will never ever harden! Also add the milk a little bit at a time till at the thickness you want. Do NOT add all the milk in at the same time! As you can tell I have made every mistake possible! This frosting is perfect for cookies, cupcakes, eating alone, and putting on graham crackers! Yum!

3 c sifted powdered sugar
1/2 c butter(remember at room temp!
1 tsp almond extract
1/2 tap vanilla
About 1/6 c milk

Chicken Caesar Sandwhiches

So delicious! Another successful pinterest recipe. This is from Chef in Training. Pictures to follow after the post. Sorry I can't figure out how to get the pictures in with the text on my phone. And it's a crock pot meal! Yum! We also put in some olive oil and balsamic vinegar to taste. Which was way good! And to shred the chicken if you have a mixer place it in with the paddle attachment and mix for till shredded! Perfect shred everytime!

2 lbs boneless chicken breasts or thighs( I used chicken breasts)
1/2-1 c caesar dressing of choice
1/2 tsp black pepper
1/2 c shredded Parmesan cheese
1/4 c fresh parsley,minced or 2 tsp dried parsley
2 cups shredded romaine lettuce
12 slider buns or 4-6 regular buns

Cook chicken on low with 1-2 cups water for 4-6 hours.
Remove chicken and shred. Dump out excess water from crock pot.
Place chicken back into crock pot. Pour dressing, cheese,parsley,and pepper over the top. Stir until cheese is melted evenly. Cover and cook in high for 30 mins or until hot.

Spoon about a 1/4 c onto buns, top with extra cheese and lettuce.

Meat pie

A real man meal. Meat and potatoes. Very simple to make. You can make it with any type of canned or frozen veggie. And I at time brown the meat with seasoning instead of an onion.

1 lb ground beef
1/2 an onion
1 can tomato soup
1 can green beans
1 cup frozen corn
Mashed potatoes and cheese to top.

Brown meat and onion together. Mix meat, and veggies with soup. Top with potatoes and cheese.

Bake 350 for 30 mins. Should be bubbling and cheese should be melted.
