Chicken Caesar Sandwhiches

So delicious! Another successful pinterest recipe. This is from Chef in Training. Pictures to follow after the post. Sorry I can't figure out how to get the pictures in with the text on my phone. And it's a crock pot meal! Yum! We also put in some olive oil and balsamic vinegar to taste. Which was way good! And to shred the chicken if you have a mixer place it in with the paddle attachment and mix for till shredded! Perfect shred everytime!

2 lbs boneless chicken breasts or thighs( I used chicken breasts)
1/2-1 c caesar dressing of choice
1/2 tsp black pepper
1/2 c shredded Parmesan cheese
1/4 c fresh parsley,minced or 2 tsp dried parsley
2 cups shredded romaine lettuce
12 slider buns or 4-6 regular buns

Cook chicken on low with 1-2 cups water for 4-6 hours.
Remove chicken and shred. Dump out excess water from crock pot.
Place chicken back into crock pot. Pour dressing, cheese,parsley,and pepper over the top. Stir until cheese is melted evenly. Cover and cook in high for 30 mins or until hot.

Spoon about a 1/4 c onto buns, top with extra cheese and lettuce.

Meat pie

A real man meal. Meat and potatoes. Very simple to make. You can make it with any type of canned or frozen veggie. And I at time brown the meat with seasoning instead of an onion.

1 lb ground beef
1/2 an onion
1 can tomato soup
1 can green beans
1 cup frozen corn
Mashed potatoes and cheese to top.

Brown meat and onion together. Mix meat, and veggies with soup. Top with potatoes and cheese.

Bake 350 for 30 mins. Should be bubbling and cheese should be melted.

Chicken and green beans

The holidays bring delicious sides one of which being green bean casserole. This is a spin off of that. It is my favorite dish. I grew up eating it and now I get excited every time I make it. Crock pot cooking is my favorite so add my favorite recipe to that and I am in heaven! It is the one recipe I always have the ingredients on hand and the recipe is memorized. Enjoy!

3-4 chicken breasts
1 cup chicken broth
1 can cream of mushroom soup
1 can French fried onions
1-2 cans drained green beans

Mix broth, soup and onions. Pour into crock pot over frozen chicken breasts. Cook on low for 8 hours or on high for 5-6 hours. Stir in green beans just before serving. Serve over rice.

My mother every so often would cook it in the oven. She would cook the chicken and mix it all together and put it in for 30 mins or until bubbling.

Chocolate crescent rolls

Crescent rolls and chocolate where can you go wrong with that combo then top it with powdered sugar and it's a little bit of heaven. This is just a recipe for something I came up with on night when desperately wanting a chocolate croissant for eddies bakery but being 100 miles away! I hope you enjoy! I usually just eye ball the amount of chocolate and again I use semi sweet chips. You can do it with out the topping or with. We once even put the coconut pecan frosting on top and it was amazing! Pictures of all the steps at the end!

Powdered sugar

Unroll crescents I usually roll them out on wax paper. Separate. Place chocolate chips on rolls. Roll up pinching ends together. Otherwise you get a chocolate leak.
Bake 375 for 8-10 mins
Melt chocolate. Spread on top. Then sprinkle with powdered sugar.

Chicken Divan and St patricks day

So every year for st Patrick's day we have green root beer. And this year we had chicken divan which is a yummy broccoli and chicken casserole with an amazing cheese sauce on top! Served over rice. Which this time I added green food coloring to just for some fun! Pictures of the process will be the bottom!

1 head broccoli, cut into bite size pieces and cooked in microwave with 1 tablespoon water for 3 mins.
4 cups diced chicken(cooked)
1 can cream of chicken soup
1 tsp Worcestershire sauce
3/4 cups Parmesan cheese
1 cup milk
1 cup mayo

Mix together soup,worcestershire sauce, cheese, milk and mayo. Layer broccoli, then chicken. Then top with sauce.
Bake at 350 for 30 mins

Chocolate chip cookies!

There are vey few things that make me so excited to make from scratch! And these are one of them!! They are not for the faint of heart! I have made them with Splenda sugar and brown sugar as well to cut down on the sugar and calories and they turned out just as amazing! It makes such a big batch I would say at least 6-7 dozen that I scoop them and freeze them! I will show you what I use at the end! I have used my kitchen aid mixer since I got it. But I have also used a hand mixer.

Now for the recipe:
2 sticks of butter(room temp)
2 sticks of margarine(room temp)
3 eggs
1 1/2 cups sugar
1 cup light brown sugar
1 cup dark brown sugar
2 1/2 tsp vanilla
6 cups flour
1 1/2 tsp salt
2 tsp baking powder
2 tsp baking soda
2 12 oz bags chocolate chips

1st let the margarine and butter sit out until at room temp and soft.
Then cream butter and sugar for about 3 min.
Add vanilla and eggs cream for another 3 min.
Add dry ingredient until combined. I usually add all and only 1 cup of flour then add in a cup at a time. Otherwise you have a big flour explosion on your hands!
Then add chocolate chips.

Bake at 375 for 9-12 mins.

Now I use a scoop to make mine. I scoop them out at put them on a baking mat or foil. Foil makes for less clean up! They should look golden brown when finished. Once I have made all the cookies I want I scoop the rest into pans and put them into the freezer until firm. After that I put them in a freezer bag. All you have to do when you are ready to use them out of the freezer is preheat the oven, put then on the pan, bake and enjoy! The whole process to make them usually takes about 30-45 mins. I have also made them with nuts and peanut butter chips. I used the peanut butter chocolate chips. Or once I made them with 1 bag chocolate chips and 1 bag peanut butter chips. I also use semi-sweet the batter is very sweet so you dont really need a chip with a lot of sugar.

Big chunks of mushrooms! And I used cream cheese! The meat is so tender you don't have to worry about a knife it just falls apart!

I personally love cooking in the crockpot! I love setting it and forgetting it! I love soups, casseroles, and stroganoff in the crockpot! Speaking of stroganoff thats my first recipe I am sharing with you lovely people!! Because we are having it tonight! So very easy and delicious! so here is the recipe. Now I did get it from a blog called the Well feed newlyweds. That's what I want to do with this blog. Give you all great recipes that are easy, delicious and cheap! Some being from pinterest and others from my family's recipes! Let me know if there is a recipe you have been wanting and I will find one and try it out!

2-3 lbs beef stew meat
1 medium yellow onion, diced
1 tsp salt
1/4 tsp pepper
1 1/2 c beef broth or stock
1 tablespoon worcestershire Sauce
1 tablespoon ketchup
1/4 tsp garlic salt
1/3 c flour
6-7 tablespoons water
8 oz sliced mushrooms
1/2 c sour cream or 1 block cream cheese sliced ( cream cheese makes it creamer)

Place beef, onion, salt, and pepper in slow cooker. Stir to combine

In small bowl whisk together the broth, Worcestershire sauce, ketchup and garlic salt. Pour into cooker, cook on low for 7-9 hours.

In a small bowl, combine flour and water. 1 tablespoon at a time. Whisk to combine.mixture should be thick but still able to pour. Pour into crock pot stir. Add mushrooms and cream cheese is using. Cook in high for 30 mins. If using sour cream stir in before serving.

Serve over egg noodles or potatoes

We had it last time over potatoes and today we are having it over egg noodles!!! I hope you enjoy it!
